~ Utica Chicken Riggies ~
This Italian- American pasta dish is native to the upstate area of New York surrounding Utica & Rome. The dish is so popular that there is an annual ‘Riggie-fest’ competition held since 2005.

~ Chicken ‘Rochester’ ~
Known elsewhere as Chicken Française, even though it is of Italian origin, and originally was made with veal. After WWII, Italian chefs Tony Mammano and Joe Cairo brought the dish to Rochester and sold it as “Chicken French.” It’s so popular now most locals today simply call it “Chicken Rochester.”

~ Old Barrel Cocktail~
On October 24, 1901, Anna Taylor, a schoolteacher from upstate New York, became the first person successfully to go over Niagara Falls in a barrel. It was her 63rd birthday and she figured she would achieve fame and fortune from her stunt. She never became a household name but we decided to honor her with this unique cocktail.
